The Kitchen Witch is located in an historic two-room schoolhouse built in 1832.
History
The school building has been lovingly restored to authentic 19th Century decor. It features the original hardwood floors, trim and wainscotting throughout as well as gorgeous double-hung paned windows which admit lots of natural light and a breathtaking view. Beautifully decorated, it features antique wooden tables and pressback chairs, lovely wallcoverings and window treatments and vintage prints.
Established in 1980, The Kitchen Witch Tea Room developed a tremendously loyal clientele of repeat customers, comprising both summer visitors and local residents. It has offered a tempting menu of sandwiches served on home-baked breads, freshly-ground coffee and a variety of teas.
We have owned and operated The Kitchen Witch since 2006. Early in 2007 we became aware of the local demand for gluten-free products, and our menu was gradually modified to accommodate this need We established a designated area for preparation of gluten free items; including separate utensils and appliances.
Our menu is now approximately 80% Celiac friendly, but we quickly outgrew the area established for gluten-free foods. We now have a completely separate and fully equipped gluten-free kitchen.
Kitchen Witch Legend
Kitchen Witches are said to be a Norwegian custom, inherited from early settlers. This witch was a good witch, said to make the kitchen a spot of warmth and happiness. Gentle, whimsical and loving, she created such magic that the mischief of the bad witch, who curdled milk and would not allow cakes or bread to rise, had no power. When you hang a charming Kitchen Witch, legend indicates that rice, beans and toast will not burn, pots never boil dry and there will never be too much salt when baking, boiling or stewing. The spices you mix will be perfect, as well as the tea and coffee you serve.
Tea Leaf Reading
Tea leaf reading is a mystical art which has been practiced since ancient times. Since people first began drinking tea, they have been fascinated by the shapes left at the bottom of their teacup. The early Greeks practiced a variation of tea leaf reading, using wine instead of tea. They called this technique "Kottovos". If you consulted a Greek seer, he would throw wine into a metal bowl and observe the shape of the resulting splash and the formation of sediment at the bottom of the bowl. Depending on the image, future events would be forecast which could be interpreted as positive, negative or simply unclear.
In the Middle East, it was more common to read coffee grounds, especially with the thick and syrupy Turkish coffee. Professional coffee grounds readers are common throughout Asia even today.
Europeans seem to have adopted tea leaf reading around the mid-1600s, possibly due to the influence of Rommany gypsies who practiced the art as they traveled from town to town. The gypsies specialized in dramatic proclamations about a future clouded in doom, but if you crossed their palm with a sovereign or two, they would try to remove the curse from you. Their style of tea leaf reading, while entertaining in its shock value, often discouraged sincere seekers who were hoping for genuine guidance and enlightenment from their tea leaf reading.
Food
Using local products wherever possible has been our philosophy since we purchased and reopened The Kitchen Witch in 2007.
Prince Edward Island offers a wide variety of locally grown and produced foods; we take advantage of these at every opportunity. Established favourites include our Reuben Sandwich and PEI Baked Potato Pizza.
Our menus abound with the red PEI map icon which denotes locally sourced items. As local veggies come into season we utilise them in limited batches of hearty soups. Additionally we prepare our own jams and pickles using fruit and vegetables grown right here on our island.
Early in 2007 we became aware of the local demand for gluten-free products, and our menu was gradually modified to accommodate this need. We established a designated area for preparation of gluten free items, including separate utensils and appliances.
Our menu is now approximately 80% Celiac friendly. We quickly outgrew the area originally established for gluten-free foods. We completed a major expansion, and now have a completely separate and fully equipped gluten-free kitchen.

Traditional English Christmas Cakes
Treat yourself to a traditional English Christmas Cake just like my mother-in-law makes. We use all natural ingredients including real butter and dark sugar.
Our Christmas Cake is very rich, moist, full of currants, sultanas, raisins, mixed fruit, candied cherries, nuts and spices all of which come together to create a cake that makes the perfect holiday dessert. We make our own Almond Marzipan and place a generous layer over each cake. The cake is then covered with Royal Icing. The cake is prepared several weeks ahead in order to obtain the perfect mixture of flavours.

The root of the ginger plant has been used in Asian cooking for thousands of years, as it has a clean, fresh, spicy flavor that blends well with many ingredients. Ginger is also very soothing to the stomach and can aid in digestion. It is often recommended for motion sickness and nausea, since it soothes without any side effects.
Lemongrass is a tall, tropical grass which has a wonderful fresh lemon aroma and flavor. This beautiful plant is found in India, tropical Asia, Africa, South America, Australia, and in Florida and California. Lemongrass lends a wonderful flavor to Asian cooking, especially Thai, Malay and Indonesian dishes. The essential oil in lemongrass, citral, gives lemongrass its distinctive citrus flavor. In fact, citral is often used as a substitute for lemon oil. - Licorice Spice

Licorice Spice is an exclusive blend for Stash Tea. It is both sweet and spicy with the distinct yet subtle flavor of black licorice. Our Master Blender ensures that each handcrafted batch is perfect. Special care goes into the purchase of the herbs and spices which we buy from all over the world for this unique blend.
One of the key ingredients, licorice root, first appears in the Chinese Pen Sao Ching (Classic of Herbs), written more than 5,000 years ago. Chinese physicians prescribed it to treat a variety of ailments including coughs and colds, malaria, food poisoning, respiratory problems, liver and urinary complaints. They often used its natural sweetness to mask the bitter taste of other herbal medicines.
Licorice root (Glycyrrhiza) is from the legume family and is 50 times sweeter than sugar. Its name is derived from the Greek word "glycos plus roza" which means "sweet root". The Romans called it "Liquiritia", which evolved into "licorice." There is also evidence that the ancient Egyptians used licorice root. Amid the treasures of King Tut's tomb, archeologists found a bundle of licorice root.
Another ingredient, cinnamon, is one of the oldest known spices. Cinnamon comes from the bark of an evergreen laurel tree. Native to Sri Lanka, it thrives in this hot, moist climate. Cinnamon is naturally sweet with a delightfully spicy fragrance due to the essential oils found in its bark.
Star Anise, native to Southern China and Vietnam, is the fruit of a small evergreen tree that bears small yellow flowers. The flowers are followed by fruits in the sixth year and the tree continues to bear fruit for up to 100 years. It is a very pretty spice with the shape of an irregular eight-pointed star. Its Chinese name "Pak Kok" means eight points. Although not related to anise or fennel, star anise has a similar aroma and flavor. It has a licorice-like flavor and a distinct sweet note.
The sweet orange is the most popular of all citrus fruits. It originated in China where it received its botanical name "Citrus Sinensis". Columbus brought seeds of orange, lemon and lime on his voyages to the New World in the 1490s. During the early 16th century, settlers planted oranges in Florida, which was to become the states flourishing citrus industry. In the early 1700s, missionaries planted oranges in California, which now rivals Florida in world citrus production. Stash Tea sources its orange peel from the best California Valencia oranges. The orange peel is made only from the orange colored outer peel and not the white inner membrane which has a bland and bitter taste.
Sarsaparilla, a root of woody climbing plants of the genus Smilax, is native to Central and South America. These flavorful roots and rhizomes can be unearthed throughout the year. The ancient Greeks and Romans considered sarsaparilla an antidote to poisons. Sarsaparilla was not a popular herb until the 16th century when Spanish explorers discovered the Caribbean species, a small, prickly vine. The Spanish word for it evolved into sarsaparilla. - Wild Raspberry
Raspberries grow wild in the cooler regions of the northern hemisphere and in some parts of the southern hemisphere as well. The ancient Greeks were the first to cultivate raspberries. They called the fruit "idaeus" because it grew wild and abundantly on the slopes of Mount Ida, as it still does today. Thus it is fitting that "Rubus idaeus" is the botanical name of the primary species for both the wild and cultivated raspberry.
The genus also includes the blackberry, which is very similar to the raspberry. Both berries come in a variety of colors from white through yellow, orange, pink, purple, red and black. Thus color is not the distinguishing feature, rather the size of the fruit is. The blackberry fruit is larger than the fruit of the raspberry.
The color of the raspberry is determined not only by its species, but also by climate. Raspberries from Northern India and the Himalayas are black, while yellow and white raspberries grow in Europe and parts of Asia. The wild red raspberry which grows in the United States is sweeter than other species.
Raspberry jams, jellies, syrups and vinegars are famous around the world, as are raspberry desserts such as ice cream, sorbet, pastries, and pies. However, a bowl of fresh raspberries may be the best raspberry dessert of all.
Most people do not realize all the health benefits raspberries offer. One cup of raspberries contains 31 mg of vitamin C, and it is a good source of vitamins B-12 and B-6. Raspberries are also high in fiber, low in calories and contain no fat or cholesterol.
Recent clinical research at the Hollings Cancer Institute in Charleston, South Carolina, confirms that a phenolic compound called "ellagic acid" helps to prevent and possibly inhibit many forms of cancer. Ellagic acid is found in certain fruits and nuts, however, the highest concentration is found in red raspberries.

On a hillside in the town of Kensington, Prince Edward Island, stands a forbidding mansion. Local legend tells of a wealthy English man, Dr. Jack, descending on the small farming community in the early 1890's and creating his Tudor style home. Care was taken to recreate the winding streets of London in the old cellar to provide an atmosphere of home away from home. As the story goes, he opened a small hotel in his house, however many of the visitors were reportedly never heard from again. Several famous figures reportedly stayed with the Doctor for extended visits, the most notorious being Lizzy Borden... some say she still walks the halls! Come for a visit and see for yourself how the legend has grown. Maybe you'll even live to tell about it!
